Peppers!

I had some red, green and yellow peppers around the house this week.

First, this pan is about a half-inch deep, but it’s got a lid and can be flipped over. I bought it from a mail-order catalog about eight or ten years ago, looked at it when we got it, thought “it’s too shallow!” and forgot about it. About a month ago I rediscovered it and thought it deserved to be tried, at any rate. It works like a charm, although the end product is more frittata than omelette.
