St. Patrick’s Day 2013

It took from 7:45 AM till 6:15 PM, but the crock pot finally cooked the corned beef and cabbage with carrots and onions. That’s cooking on low till about 2:45 PM, seven hours, and another three and one-half hours on high. I don’t think my crock pot’s heating element is doing its job right, although the pot got plenty hot even on low. Maybe it’s just the density of the hunk of corned beef.

I got ambitious while I was waiting for it to be done and made some Irish Soda Bread. The bread machine recipe is here if anyone’s interested.

  1. I think it is the kind of meal that took so long, not that your heating element is not doing it’s job. I put my corned beef (two good sized pieces) in at around 10AM – it never reached a boil til 4?? Next time I think I would start with hot water, not cold. I took the meat out at 5, put in the oven to keep warm and then popped in all the vegetables and at 7 had to take them all out with the liquid and put in my soup pot to finish off cause they just were not cooking. If I had left them, it would have been after 8 before they were done. Lesson learned, crock pot may not be the best way to cook this kind of dinner. I only did it this way because of the oven rack problem I have and knew it would be too dangerous to put that much weight with that much liquid on the rack.

  2. Could be. It was a 3-lb. brisket. It finally started to boil at about 5:00 PM. Mom thought it was perfect, so I felt good about that. I thought it was pretty good too, and I don’t like the stuff much. The beef was tasty and even the cabbage wasn’t too overcooked and limp.
