One-skillet meal

Rummaging in the freezer and vegetable drawer I came up with this mixture this evening — sliced smoked sausage, red, yellow and green pepper strips, yellow onion chunks, quartered red potatoes, mushrooms and a handful of grape tomatoes. It turned out pretty well.

  1. Sounds good except for the green peppers–I have developed an allergy (not sure what else to call it) to only COOKED green peppers and if I eat them I get violently ill. Even if they are cooked with something else and then pulled out, I still get sick. Strangest thing, started happening about 10 years ago I guess. I have learned if I am going to be somewhere where I will be unable to control what I am eating to take a antacid before I go or pop one when I get there and it makes a huge difference.

  2. yup, yellow and red do not bother me. I have substituted them in all the recipes I used to use green in (and I was amazed at how many there were). Have had to play with seasoning in some cases they they do have a different flavor. OH, and I can eat RAW green peppers with no issue whatsoever. Yea strange, but then–consider the source!! 😉
