Rummaging in the freezer and vegetable drawer I came up with this mixture this evening — sliced smoked sausage, red, yellow and green pepper strips, yellow onion chunks, quartered red potatoes, mushrooms and a handful of grape tomatoes. It turned out pretty well.

I could, but then I’d have to cook a starch, so I just mix ’em in.
Sounds good except for the green peppers–I have developed an allergy (not sure what else to call it) to only COOKED green peppers and if I eat them I get violently ill. Even if they are cooked with something else and then pulled out, I still get sick. Strangest thing, started happening about 10 years ago I guess. I have learned if I am going to be somewhere where I will be unable to control what I am eating to take a antacid before I go or pop one when I get there and it makes a huge difference.
Just green? Can you eat yellow and red? That would be really strange, I’d think.
yup, yellow and red do not bother me. I have substituted them in all the recipes I used to use green in (and I was amazed at how many there were). Have had to play with seasoning in some cases they they do have a different flavor. OH, and I can eat RAW green peppers with no issue whatsoever. Yea strange, but then–consider the source!! đ
