Just heard on The Splendid Table, Jane and Michael Stern extolling the virtues of the Anchor Bar in Superior, WI, which has “hand-formed” hamburgers. Well, the ones I make are hand-formed too. So there! My mind boggles at the idea of making hamburger patties with biscuit cutters or something.
